Clams
Palourde or carpet shell clams are considered the best and most consistent. They are generally of medium size with a white, yellow or light brown shell. Clams can be steamed, fried, grilled, braised, baked or even stuffed. Available all year round.
Razor Clams
Very tasty and under used here. The supply of razors are seasonal between the months of March to September.
Cockles
Synonymous with the British seaside….. Pickled in vinegar and eaten on the pier out of a polystyrene cup with a wooden fork – good childhood memories!! Today they are making a comeback due to the endorsement of celebrity chefs. They are a good source of cheap protein, iron and vitamin B.
Mussels (Bivalves - Molluscs With A Two-Hinged Shell)
Mussels should be bright, clean and tightly closed with no broken shells.Archaelogogical findings suggest that they have been used for food for over 20,000 years! Our supplier is one of the largest and finest producers of rope grown mussels in the world. Did you know Mussels are available with all the months with the letter R in them?
Scallops
The name Scallop is derived from the old French escalope which means shell. They have two types of meat; the scallop which is firm, white and meaty and the roe (coral) which is red and softer. Generally chefs here prefer roe less American scallops for ease of service so we do not get the opportunity to see much product still within its shell.
Langoustine
A superb product and the original source of “scampi”. A small, orange coloured lobster-like creature whose meat is in the tail of the shell. Caught almost exclusively in Scotland with “creel” nets under strict regulation to protect the fishery there.
White And Brown Crab Meat
Picked from the common brown crab landed mainly from small inshore boats that pot CAUGHT off the shores of Devon. Then cooked and hand picked – producing beautiful fresh, sweet meat. Pasteurised is also available on request but is generally machine picked and is less flavoursome.
Ferguson King Prawns
King prawns, wild caught from Australia, then sorted, graded and blast frozen at sea. U8’s available and sold in 5kg waxed cartons.
Oysters
Regarded as the food of love and romance, people have been eating them for centuries. Delicious, succulent and with a unique taste. We use two trusted suppliers for Native and Rock (Gigas) Oysters who supply a fantastic product.
